Hi everybody,

My name is Jesse and I am from Saskatoon, Saskatchewan. I have a Weber Smokey Mountain smoker and have done a few smokes under my belt so far, including a brisket (first thing I smoked. It was a learning experience and was edible), 3-2-1 ribs, and some smoked chicken drummies - the latter two I have done twice so far.

I had browsed through the forum before while I had been searching for newbie smoking information, but thought I would join this time and stick around.

I smoke BBQ, but I am a hunter up here and harvest geese, ducks, upland game birds (Prairie Chicken, Ruffed Grouse, Pheasant, etc.) and a fisherman (smoked fish is on the to-learn and eventually to-smoke list). I have some venison and goose meat I have made dehydrated jerky with before, but I want to learn how to smoke snack sticks, fresh/cooked sausage and eventually learn how to make salami and other dried meats.

I'm 30 so I should be able to figure out how to upload some pictures of what I have smoked so far. Sometimes it is hard to get pictures because the food doesn't stick around long enough to get its picture taken!

Welcome Jesse! That wsm is one heck of a smoker! Lots of folks around here doing exactly what you're talking about. Poke around, ask questions and above all post some pics of the critters you smoke!!
