Hey,

My name is Toby. I'm from a small area in the heart of NC. I'm located almost in the middle of the state, between Greensboro and Raleigh. 3 hour drive to the coast, 3 hour drive to the mountains.

I've been smoking meat for right at 1 year, so I am still quite new to all of this. I've been on this site and soaking in all the great information for about a year also. I thought it was time to introduce myself and say "hello". I have already learned so much from you guys, and eager to learn much more. I had no idea that smoking food was so involved, but it has already been a lot of fun, and I'm constantly looking for new meats to throw on the smoker.

Right now I'm using a Chargriller Duo w/SFB. I have done most of the "mods" that are mentioned in the forums, but it is still a chore trying to control and maintain steady temps. But part of that is what makes it fun. I have been thinking about expanding out and getting the WSM. From what I've read it is a little easier to use, and you can cook a lot more meat at one time. Any advice on this is greatly appreciated.

Well, thats just a little bit about me, and my smoking experience. Those who know me, know that I can talk forever, but no one comes here to read a book, so I'll just stop here for now. But I really appreciate all the loyal contributors to this site. You will never know how many people you have helped start this jorney, that will choose to remain a "lurker", just like I was before today.

Hello Toby...Welcome to the forums!  You'll find there are lots of friendly and knowledgeable folks here who genuinely enjoy helping one another.  Looking forward to your input, and just ask when you need anything...someone here will surely have the answer.  You couldn't go wrong with one of those WSMs...by all accounts, they are among the best charcoal smokers out there.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions Post it
and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Thanks for the warm welcomes!! It's just what I expected. I know you guys are always gracious in welcoming us new guys aboard.

I will keep you updated on the new smoker purchase. It will probably be after the holidays. Right now I'm getting ready to order an "amazen" pellet smoker to cold smoke some bacon. My brother and I have got a pork belly in Pop's brine as I type this. It will be ready next sunday. Waiting seems to be the hardest part. But I will certainly let you guys know how this turns out.
