need some good african food recipes

We are having are Mission conference at our church and the wife and I have chosen Africa for our international dinner.  So I really have no ideal

what would be good to cook up.  We helped with this last year and the other couples wife fixed some kind of ribs in a slow cooker till they fell apart in what looked like the water they cooked in with spice and some BBQ sauce " had a great taste" and the rib meat was served in a tortilla with coleslaw and a sweetcorn salsa looking stuff.  they where great. 

I need some good recipes if anybody would like to share some
