Lobster, Celery and enough Mayo to bind is the Classic. Beyond that people add to taste. Chives, Scallion or grated Onion, minced Tarragon, Parsley or Basil works. A little bit of DijonMustard is good. Old Bay or Cajun Seasoning and some Hot Sauce is popular too...JJ
We sub shrimp and prawns all the time. Being from the Oregon Coast and with it being Dungeness crab season right now, we use Dungeness crab too!
