My wife may be going to Italy in June with daughter, Im going to make a list of what I need as im staying home to feed both houses of critters.
 
Well, the USDA changed the import regulations not to long ago...you can buy the real deal stuff from Italy now in the U.S. So who knows... sure hope you can.

Casing pulling from the small Nduja, feels good, smells good so we will see in couple months.

All 3 are getting a little firmer than when first put in the cave.
