Last week making hot dogs our processor wouldn't get up to speed I have it quite a long time we had to settle on a double grind. Looking for advice on what to buy to emulsify

I run a Champion juicer for emulsification. It’s a different type of juicer called mastication. It has a tapered cone with series of small teeth that spin very tight to a stainless steel interior. It eats meat well and makes a nice product without creating heat. I have a thread about it somewhere in here.

I think a double grind through a small (3.5mm plate) will get you close to an emulsion, but not quite.

I have a food processor that will probably do the job, but it would have to be done in batches. I have so far not done any emulsified sausages due to the equipment I have at hand.

There are currently a good selection of them on eBay. You will also need what is called a “blank plate” that replaces the screen on the bottom with a solid piece. I think those are still available on the Champion web site but colors are limited.

If you can’t find a blank for the screen the main Champion website has one in silver only.

Should be able to find a complete unit with one or find it individually on eBay as well, the blanks aren’t “hen’s teeth” out there in the world.
 
Champion juicers can still be found on eBay, but they are often incomplete, or motor only. Usually not very cheap, either.
Check out FB Marketplace. Most sellers have no idea what they have. Got mine for $75. That said, what DougE DougE before said is true. Good double grind thru small plate is dang close. Even after a double Champion run I don't think you get quite the same level of quality of emulsification as a pro with a bowl chopper. Using STPP?
