New 1 horse Cabela's for Christmas, thanks kids, I love it! No picture. You guys know what it looks like! Put an Armstrong brand tilt mixer mod on my standard LEM mixer. My way of making caseingless sticks. One at a time onto a strip of freezer paper, then roll onto the smoker rack. Racks full of nice neat sticks. Modified a couple extra racks to fit in my small electric smoker, 15# at a time. Finished product. Nepas hot sticks, my favorite. Everybody's favorite that I give them.to!

Thanks! Nepas' recipe is really good. Everyone I give them to love them. They think I'm a super duper snack stick maker! I really like them without casings.
 
And the great thing about doing sticks this way is you don't have to worry about the meat getting too stiff for a small stuffing tube. I use a 5/8 in. ID stuffing tube.
