A couple weeks ago I was bouncing around some ideas with Jerry (
pineywoods
) about what I'd offer as my contribution to the North Florida gathering. Decided to have Joe at CPB send a whole 103 sub primal rib section straight to Jerry's house so it'd be there for the event. After thinking about it for a bit I came to the conclusion that it might be fun to offer this up for somebody else to cook. I've been through quite a few of these roasts so it's nothing new to me but it may be something that somebody else has never had the opportunity to cook. Hey....these events are all about fun
Basically what you'll have to play with is a massive untouched hunk of bone-in prime rib (standing rib roast) that you can break down however you want, prep, and cook. There are a LOT of different ways to break these down... prime rib roasts, steaks (several different versions), ribs, etc....I'll be at Jerry's on Thursday evening for fun, Friday for the start of the event, and Saturday for the main course. If you think you'd like to take this on and are not sure how to break it down, I'll be more than happy to help. We can discuss the different options and go about turning it into whatever cuts you want. Here are a couple pics of one I did not long ago just to give some ideas. The roasts run from 22# up to 30# but the configuration is always the same.
This one I broke down into a few tomahawks, some ribs, and a rib roast. You can use the scraps for chili or a stew if you want.
