My first shot at hotdogs!!! with Q view

Ive been wanting to make some frankfurters for sometime now so i finally got my sheep casing in so here it is!! but i got to say its a lot hard to stuff the sheep casing than pork one!!

freshly ground chuck i just used pure beef on these dogs.

after i put it all in the food processor with cure and seasoning

then came the fun part stuffing lol it took some getting use to.....

after that into the smoker for them to dry for 1 hour and smoke for another

then into the pot at 180 till they hit 155 internally.

after that the ice bath

the recipe i used was a simple hot dog recipe

1 1/2 tsp of salt

2 tsp smoked paprika

1 1/2 black pepper

1 tsp garlic powder

1 tsp onion powder

1/4 tsp dried thyme

1/4 tsp dried marjoram

1/2 tsp pink salt

and a pinch of nutmeg

i put it all in the coffee grinder then add it to the meat along with 1/2 cup of milk powder.
 
the recipe i used was a simple hot dog recipe

They look great and I bet they taste great as well.  I'd love to try your recipe so I have 2 quick questions.

1)  I assume 1 1/2 tsp of black pepper correct?

2)  How many pounds of meat did you use?  Thought it easier to ask than work through the math with the cure backwards to estimate this.

ya i used black pepper i used what i had on hand a lot of recipes i seen use white pepper. oh and for the meat i used 2 1/2 pounds of boneless chuck ribs that i ground myself.

Bratrules, now those are some great looking franks, dogs, wieners or what ever you want to call them, they look fantastic! Sure would like to try one of those on my Southern Hot Dogs Recipe!  Keep up the good work and let's see what you come up with next!
