I have been wanting to try my hand at ribs. The local Kroger has spares for $1.79 a lb, so thought this is a good time. The pictures attached are ribs as sold, ribs trimmed and membrane removed, coated with a commercial rub called Sweet Rub O’Mine, then cut down to fit the racks in my Pit Boss gasser.

looks good, 2.5 hours into a rack of spares and 1 hour on the ABT's in smoker as well.

After 3 hours in the smoke at 235 the ribs were at 165 IT so I pulled them off wrapped in foil with butter and apple juice and put them back on at 250.i will check the temp after 1 hour but expect they will go for two.

Here is the final shot. Tomorrow I will throw them on the grill to firm up the outside. The taste is already there I just left them wrapped too long
