The church that I go to has a luncheon on the first Sunday of the month.  This month, I am cooking Pulled Pork.  It all starts with two pork butts prepped and ready for the smoker.


I was up at 5 am to light the smoker.  It took an hour to bring the temperature up to 250 degrees.  After 3 hours of cooking, the butts have taken on a good looking color.


I will foil at 170 degrees, and cook until 200 degrees.  Then it’s time to rest for a couple of hours in the cooler before pulling.

I pulled the butts off the smoker at 205 degrees.  


They rested in a cooler for 90 minutes.  I then pulled them into a big pile of goodness.  If this don't make me right with the people at church nothing will.  (Just kidding)
