Yeah I had to take some lessons from my wife on how to run the machine. I hadn't sewn anything since 7th grade home-ec class!
 
I tried Dirt's muslin bags....  I ended up sewing a long tube...   Tie one end and put it all on the stuffing horn....  partially fill the tube and tie and cut... then re tie the end...   I could fill them to any length....   the tied ends (on both ends) made for a football looking sausage....   I like them....  this is my go to muslin bag....  I think they lose moisture faster than casings and make for a nicely dried "salami" type meat....

 
 
I been using muslin casings for years, they peel just fine. I cut the ring end off then have to cut the cloth.

I've had the same results, except I did have an issue with my Taylor ham not wanting to release from the muslin. Still not sure why that was.
