This has to have been brought up before, but I've not seen it. It hit me out of the blue today while contemplating a brisket smoke on my ECB. I think having a second modded up charcoal pan would be the best way to deal with the inevitable charcoal problems that arise with the ECB. That way, as your pan in use is dying down and heat starts to drop, but it is full of ash, despite your mods, you can have a second, ready to go with fresh hot coals. Pick the ECB up off of the first pan and set down on over the new pan. Minimal heat loss and just keep on going. Then, when the first one is cooled enough, dump the ashes and get it ready for the next switch. Every time I come up with an idea for it, I kick myself for getting rid of the old single grill one I used to have
