Was looking for something quick to smoke yesterday and stumbled upon the many meat ball recipes on here and thought I'd give it ago...
3lb 80/20 Ground Beef
1/2 Onion - finely diced
1 Carrot - finely diced
5 rashers of bacon - Chopped
1c Italian Bread Crumbs
1tsp of freshly toasted/ground Fennel Seed
1tsp of freshly toasted/ground Coriander Seed
2TBS of minced garlic
1TBS of Mixed Italian Herbs
2TBS of Worchestershire Sauce
1 Egg
Sauteed the onion, carrot and bacon...then mixed it all together. Formed balls and stuffed a cube of cold smoked pepper jack in the middle, Wrapped a slice of bacon around em and dusted with some rub. Into the fridge for a nap....then into the MES @250F over Hickory....
Out of the smoker and into the home made sauce.....
Let simmer in the sauce for around 90 mins... then served over spahetti with some fresh parm...and a slice of "not so successful" french bread.
Overall very tasty....the balls simmering in the sauce seamed to impart a subtle smoke flavor to it. I'll try and make the balls smaller next time....each ball was around the size of an orange and a pretty big feed!
