Yes, you can, the only problem is that vertically you are getting the bottom end of it much closer to your heat source in the bottom of the smoker and you could overcook one end and undercook the other; in the case of brisket you can separate the point from the flat to make each piece smaller, and with ribs, just cut the rack in half, and lay horizontal on the racks.
