More leftover beef roast

I like beef and vegetables in sauce to put on noodles or rice.
This time I just tossed everything into the pot.
  • Leftover English cut Beef roast
  • Onion
  • Green bell pepper
  • Garlic cloves x 3
  • Lb of button shrooms edit: 12 oz.
  • Can of diced tomatoes
  • 2 Tbsp tomato paste
  • Stick of butter
  • 6 Tbs of flour
  • 5 cups beef stock.
  • 1/4 C bbq sauce
  • 2 Tbs cider vinegar
  • 1 whole tomato
  • Tbs Worcestershire sauce

Nothing special. Made a roux and let it cook as I heated up pan drippings from my roast and vegetables leftover.
Chopped up the pepper and onion and cooked down a bit.
Added tomato paste and cooked down. Added gain diced. Added canned diced tomatoes. Added cubed meat I smoked .
Added mushrooms. Simmering..

Meanwhile, the beef broth was added to the drippings and heated in the slow cooker at 325 till I added it into the roux now darkened. Then I used a qt of homemade beef stock to get the sauce I wanted. Added BBQ sauce and vinegar. Worcestershire.. oh.. Frank's red hot splashed in ..
Then I dumped in the veg and meat into the sauce.. I wanted a bunch to ladle onto rice like gumbo too.. noodles this day though..
Came out good. Adjusted seasonings.
Fun experiment.

Will be great on the rice! It was a Monday evening.. had to eat and noodles were faster. Lol

Sometimes those one pot wonders turn out to be the best !! Nothing like coming home to a bubbling calderon of deliciousness that's placed over egg noodles. Man that's groceries to me !!! POINT
