Threw down on some chicken today. Seasoned with the gospel seasoning lightly and heavily with a Mexican seasoning. Cooked these breast indirect on the kettle to an IT of 155. Once at that temp I pulled them and placed them in a skillet glazed with bbq sauce and cheddar/Monterey cheese mixture and topped with bacon bits. Put them back on the grill to melt the cheese. Checked for an IT of 165 and these bad boys were ready to eat. Enjoy!!
