Monterey Chicken on the kettle

Threw down on some chicken today. Seasoned with the gospel seasoning lightly and heavily with a Mexican seasoning. Cooked these breast indirect on the kettle to an IT of 155. Once at that temp I pulled them and placed them in a skillet glazed with bbq sauce and cheddar/Monterey cheese mixture and topped with bacon bits. Put them back on the grill to melt the cheese. Checked for an IT of 165 and these bad boys were ready to eat. Enjoy!!

Now That's different. I'm not seeing Cheese and BBQ Sauce together but Hey, cant argue with how fantastic it looks!...JJ

Man oh man Adam, those look really good. I can't do chicken around here but you have the cogs turning for something really creative I might put together this evening. Nice job sir and thanks for sharing.

Thanks everyone this was an easy one too. I usually do this chicken where I slice a pocket in them and stuff the bacon and cheese in. This way was much better and a whole lot less prep.
 
Looks AWESOME! Used to be a go to of mine in restaurants when traveling heavily. Yours looks better than theirs :) Probsbly going to see a me too thread here in the next couple weeks. :)
