Hi all,
First time on the forum and I'm looking for a little advice. I've done spare and baby back ribs mostly using 3-2-1 and 2-2-1 methods, but for new years I've bought monster ribs 2.8kg per rack. I was wondering if 3-2-1 will still work or is there another method better suited for this size of ribs.
Any advice would be appreciated.

Are these beef ribs or are there 2 slabs of pork ribs packaged together. Just seems pretty heavy to be 1 pork rib.

If you like 3-2-1 ribs you can cook them that way. Some folks will square the ribs up, those are called St Louis cut ribs. Then you'll have some rib tips for a snack or something to add to beans etc since they cook a bit faster. You can also cook the whole thing without wrapping. All a matter of preference. Enjoy!
