With my wedding coming fast (Sept 1) I'm doing all the cooking for it; for about 225 people.

The soon to be is worried that I will be too "Burnt Out" from cooking for about 24 or so hours straight.

So she asked me to reach out to see if there are any local members in the Twin Cities area that would have a smoker bigger than my Chubby G2 that I could borrow or rent... (can't afford a larger on just yet) My Chubby can hold 8 Butts at one time; or 16 racks of ribs...

Maybe a trailer unit; offset stick burner or something. Figure this is a shot in the dark; but worth a try

Not in the area, but if you got a vaccum sealer <or can borrow one> I can tell you that pork butt will be easy to reheat if you can store some of it in advance in that fashion. <I also think she might be correct about burn out. I only threw up three times before working up the nerve to get engaged once. I don't think I could actually remember how to use a smoker if getting married!>

I second doing them early. When I did the smoke for my son's wedding, I smoked 14 butts over 36 hours. Picked up a fridge for free along the road and cooled them in there until the day of the wedding. Warmed them up in roasting pans for serving.
 
One of my smoking buddies did a bunch ahead for a grad party. He reheated with a sous vide circulator and just took another bag out of the water bath whenever the crockpot needed to be refilled.
