Hello my name is Demitri. I live in Salem OR and I work for the government, race my slow car and run my mouth even faster.
For smoking I use primarily an older Traeger BBQ100, so old it's still rocking the wood door. I also have a newer Traeger BBQ75 but I avoide longer cooking in it as it only has the three position controller.
I began smoking on a weber kettle, the hard way with all the charcoal (counted each briquette) on one side with a foil packet full of woodchips on top back in the early 90's. Then about 10 years ago I got my Traeger BBQ100. Been smoking everything I can ever since. I like doing briskets and my specialty is pulled pork.
Every single potluck at work I get hassled to make pulled pork but I only bust out for them a couple times a year. I seem to be the one that is always either grilling or smoking for every family occasion, for my car club or our race team -I am always burning something. I'm no newbie but I am FAR from any sort of master. I hope to learn a bunch here.
