First off, sorry I suck at not taking picts of my cooking in progress, I usually remember part the the way thru my cooks.

Been a bit since Ive posted but thought Id bring tonite's menu to the table. It is a bit of Polish/Mexican fusion, a bit of merging two different but favorite things together, Taco Pierogi.

Usually I start with 2 lbs of ground beef, but due to some medical issues, making this with ground chicken, store bought tonite, but Im sure, home ground would be better.


Start off browning your ground chicken with a touch of oil, ground chicken sticks, alot. Once your meat ks brownded, add your taco seasoning, I use the Allrecipe taco recipe, see below.

Most taco seasoning recipes say add water and taco seasoning at the same time, I add the seasoning a minute ot two before the water, letting seasoning toast a lil bit, then add the water.

At the same time, I get a pot of water boiling, once up to a boil, add your favorite pierogi, we use the frozen Mrs Ts mini pierogo, cook as directed

Once your pierogi are done, drain and return 1/2 the pierogi to the pot, stir in half your taco meat mixture, the the remainder of the pierogi and mix in the remainder of the meat.

Top with your fave taco toppings, sour cream, cheese, salsa, etc and enjoy

Side note, be careful stirring in the tacomeat as not to break up the pierogi
