Hows it goin guys. I am a hobby smoker and get to eat my hobby.LOL I have a Master Built Electric Smokehouse. Last month I smoked a few gyros, 50% beef and 50% lamb, it was great.
1 lb. ground lamb - I deboned a leg of lamb
1 lb. ground beef - I ground some sirloin steak
1/2 cup shredded onion
1 tsp. salt
1 tbs. garlic powder
1 tbs. dried ground marjoram
1 tbs. dried ground rosemary
1/2 tsp. pepper
I ground the meat then added the spices and mixed with hands then put it in a meatloaf pan lined with plastic wrap as a mold. Took it out of the pan onto the rack. Set the smoker at 250 deg. and used two pans of woodchips, the total smoking time was three hours.
Other Ingedients:
Cucumber Sauce
1 cup plain yogurt
1/2 cup sour cream
1 cucumber cut into small cubes
Splash of hot sauce
salt and pepper to taste
