I'm a big fan of smoke. I smoke meat at least a couple of times a week: chicken, pork, beef, salmon. Pulled pork is probably my favorite. But I had success with a brisket today. Posted it in the beef forum. I use a Traeger junior with thermostat. Wouldn't mind trying a smoker that ran on big wood. But the little Traeger is working well. Looking forward to reading the forums here.
