Hello, Smokers!

This is Michael, writing from Chicago. I've been smoking meats for many years, and I've run into an issue since I changed smokers. I had a Brinkman duel level charcoal smoker for almost ten years, and now I received a Masterbuilt electric smoker (three levels, no window) as a gift. While I love the temperature control on the electric, and the moisture of the meat, I am really missing that smoky taste. I've tried wood chips, and recently the pellets (though it looks more like dust or shavings to me), but I'm still lacking the real smoke flavor.

This seems to be a common problem in my investigation on the Web. Does anyone else have this issue, and has anyone found a solution?

I'm considering getting myself another charcoal smoker, but I feel there has to be a way to make the electric work to my liking. Any tips or information you may have would be helpful.

A very popular way to add smoke in the MES is by using an AMNPS, it is a smoke generator that burns wood pellets for up to 10 hours of perfect smoke. There are a lot of people on here that use the MES and AMNPS combination and love it. There are probably hundreds of threads on here about it.

I live in Andersonville now, but grew up in Glenview. I'm going to order the A-MAZE-N-PELLET-SMOKER package in hopes to upping my smokiness.

I've gotten into making my own bacon in the last year or so, but I'll smoke any meat I can

Welcome. I went from and ECB electric to an UDS and have never looked back. One issue I had was inconsistent smoke on the ECB another was power to maintain temps in a cold climate (even with a wind break - lived in Detroit metro then not a big deal here in Tulsa)
