My wife rubbed down a 9lb pork butt last night for some mexican pulled pork today on the pellet smoker.

Use an oven bag so ya dont have to mess with wrapping clear wrap all over.
No in the fridge for over night.

My surgery went well on Thursday, so she has done 99.99% of the prep on the pork.

Resting this morning and ready for the smoker.

Looking good and nice to have an assistant 😀! I haven't tried their Fajita Rub but no doubt it's a good one.
Glad the surgery went well and you'll be back at it in no time!

I did one of these using the Meat Church recipe and it did turnout pretty good. It wasn't quite as spicy as I thought it might be but it does make good tacos and burritos. You will be pleased.
 
That is a great idea! Looks great!! I also love Meat Church rubs…I think they can do no wrong.
 
Good to hear that your surgery went well, good food will make your recovery go by much quicker.

I love Mexican butts, you can do so many different things with them, which is why they are a main stay in our house. I eat Mexican food 2 to 3 days a week, year round, I love the stuff.
