Outstanding work!! Even though I already have a MES30 with a PID controller I am adding your pdf to my keep folder.

I do have one question. Why did you find it necessary to add an external smoke generator? I use an A-Maze-N smoking tube and place it right in the bottom of my smoker. That seems to do a reliably fine job. That's why I'm asking. Am I missing something as to why you did that mod?

No problem!

I didn't go with the A-Maze-N setup because I didn't want ANY heat source in the main cabinet. I know it's not much (I think it only adds 8-12 degrees F ) but I wanted a truly cold, cold smoke.

That explains it. I've not cold smoked yet so far and not face really low smoking. Thanks
