I've had my MES 30 for a couple years. S/N AK111416 with solid door and rear-mounted slant-back controller. Started acting up recently to the point it's unusable, so I took off the back to check the wiring The connections to the heating element were in good shape. I pulled the heating element and hooked it directly to line voltage. It heated up, but never became red hot. Not sure if it's supposed to. Trying to figure out what's going on:

1. Turns on, I can set temp and time. The light turns on as it begins heating.

2. I set temp to 250 deg. Hit 226 after 30 minutes, then started dropping. Ambient temps in low 70s. Now below 100 degrees an hour after peaking at 226.

3. With the back off, I could hear a clicking from the metal box housing the high temp limit switch. I thought this was odd, as it clicked every few minutes while the temp was below the set point. But even while clicking, the temp was rising. 

I've tried to fire it up several times over the course of the past month with pretty much the same results. Gets up around 225 degrees, then down she goes.

Any thoughts what it might be or what to test?

Just checked it. An hour or so later, the temp is hovering around 234 degrees. (Set point is 250.) Go figure.

Bypass the switch and see if that solves the problem. If it does then a new switch is needed.

Thanks, you guys nailed it. The back of the limit switch was pretty much disintegrated. Amazing it was working at all. Testing it now with wires shorted together.

Edit: Set temp to 275 degrees. Only took a few minutes to hit it, so it looks like I'm back in actin. Question...what sort of spade connectors should I use for the limit switch? I cut the OEM ones off and will need to put new ones on. Couldn't find anything obvious on Amazon that indicated it was for high temp use.

Dave included the link to my post and the solutions offered. They were correct that it was the snap switch. I pulled the connections from it and taped them together. It heated up and cycled like it is should operate. Dave, Kurt and other's advice was on target and yesterday I smoked a 9 lb. Butt for 10 hours without any issues. That was my second smoke since the repairs and I intend to go back to the post and share the positive results. The switch is cheap and installation is easy.
 
Supco T1111 are 1/4 inch female spade connectors for 14-16 AWG wiring so they will work.

Replacement roll out limit switches will be Uxcell 5 Pcs KSD301.

You can find both on Amazon.

Some shrink wrap insulation is nice to have too.
