I just wanted to drop a note and introduce myself and say "thanks" for the countless amount of knowledge that everyone has shared on this site.  I have learned crazy amounts over the past few days.  Thanks again.

My wife just upgraded me from a little chief to an MES 40".  I also just took advantage of the sale on the Weston stuffers at Cabela's.  Stuffing with the kitchenaid was not getting it done!

I have made bulk breakfast sausage and some fresh brats as a trial run.  I am really looking forward to getting into some summer sausage and other smoked sausage products.

I gave the smoker a test run with a prime rib steak and pork loin steak. I was happy with the results.

It's going to be a fun winter!!

BTW - it sure is nice to have Butcher and Packer around the corner : )

Mike welcome to SMF glad you joined us. Congrats on the new smoker. I'd be in trouble if I had a Butcher and Packer around the house from me

Hey, Down Low, welcome to SMF!.  Others may not know Farmington Hills, but I do.  I lived in Novi from '86 to '01. I learned how to stuff sausage myself when I moved to Massachusetts since they don't know how to make a proper Brat here, at all!  Anyhow, welcome to the group!

First off Welcome Mike to SMF.  You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

First project is going to be some Mettwurst over the next couple of days.  Will try to snap some pics and post in sausage forum.
