Good Morning everyone. While raising a glass to America’s fallen, I’m doing my first rib cook on the smoker— five racks but can’t decide between Hickory or apple. Leaning Hickory. Updates coming throughout the morning.
 
Good Morning everyone. While raising a glass to America’s fallen, I’m doing my first rib cook on the smoker— five racks but can’t decide between Hickory or apple. Leaning Hickory. Updates coming throughout the morning.
hickory gives a heavier smoke flavor but apple gives a slightly sweeter smoke flavor,I use both and sometimes a combo for my smoked polish.
 
Thanks I’ll give the combo a shot. So far we’re off to a good start.
 
Alot of guys say they run 50:50 hickory:apple so I tried it and it is awesome. Smoked my ribs Friday and gonna wake em up from their nap, sauce and sear them tonight. Reminds me I need to make the slaw...
 
This is about 3 hours in.

I have a mixture of Hickory and Pecan. First time trying this so we will see how it goes. Yours is looking good btw
