I was in the mood for some actual meat ribs after the little celery rib experiment. I was able to find a decent package of beef short ribs at the store.
The ribs got a a generous dusting of rub and rested why the the smoker was brought up to temp.
Four short ribs are just about right not for the Mini-WSM, but for me as well.
After a couple hours the ribs are starting to take on a nice color, toothpick test still fails so they will ride a bit longer.
The bad part of the cook is I distracted and let them go a bit longer than I would liked
If I had some buns, I would have probably made up a spicy BBQ sauce and shredded the meat to make a sandwich out of it.
