Memorial Day pulled ham

Scored some nice butt portion hams after Easter for $0.79 / lbs. Decided to say was the day to do some pulled ham. These are the two roughly 8 pounders.

I usually make my own sugar free rubs but was gifted since recently I decided to use. It was a blend of Redbeard Seasonings pork rub and Cajun. On top that I added a nice dusting of AW SF root beer drink mix power.

Into the 270 smoker along with some $0.99 / lbs Swaggerty ribs. Didn't get a pic when I added more but actually did 9 half racks of those as I decided to run down to Savealot and grab more. These were all to share with my brother and my neighbors and friends. Can't beat them for the price.

Ran the smoker at 275F with B&B competition logs and cherry wood chunks Spritzed with sugar free root beer. Ribs finished early afternoon(no wrap). In the spirit of sticking to my diet I ate a few bones and gave the rest away. They were loved lol. Took the ham to 203F which took about 7 hours. Rested and hour and pulled by hand. Bones pulled clean and it shredded easily.

Very pleased with the results. I'll vacuum seal and freeze about half of this , eat a little and share the rest. Calories be damned I'll have to plan a chest day and do my Cuban Sandwich casserole with some of it. Thanks for looking!!

Looks great! Also fwiw grilled ham & cheese sandwiches with 2 slices of Colby jack cheese is mighty tasty too.

I love pulled deviled ham on a toasted sourdough hard roll, with a sliced dill pickle.

My Mom used to make them for us when we were kids, she used two hot C.I. pans to press them in the oven. (redneck panini press). I guess that's where the "pan" in Panini came from.🤣

That looks great. Still have never done a pulled ham, it is on my list and after reading your post, I need to move it to the top of my to-do list.

Thanks Keith. Man those ribs at $0.99 / lbs especially are awesome. Lots of odds and ends in the packs so you have to dig for nice racks but well worth it. Local Savealot has that special several times a year.

Looks awesome Jeff! That one I did was good but a bit salty. Think it was pouring the juices back in that did it.

Thanks Ray! The 5 Bones of ribs I had were a splurge. Saved 4 more for later this week. The rest were given out. The ham is surprisingly diet friendly with only 120 calories per 3 oz and 1 carb. I've taken 6 inches off my waist in the last year or so but have had to really tighten up my diet to continue that.

Toss some ham, dijon mustard, mayo, hot sauce, onion, celery, and sweat pickle into a food processor and pulse until it's all combined. We ate it on crackers as well, basically it's a ham spread, but it makes great sandwiches too.

My Gramp's said it used to be one of the WW2 MRE that he ate during the war. LOL
