Meatloaf sandwich

Made a meatloaf over the weekend. I always make a big meatloaf so I have leftovers for sandwiches. I even like a cold meatloaf sandwich on white bread with ketchup. But this one got warmed up on some toasted bread and cheese.

Started out with a couple of slices of meatloaf and some bacon.

Then toast the bread in a little butter in the cast iron.

A little mayo

Throw the meatloaf into the pan.

Add some cheese and cover to melt

Then build the sandwich. Put down some lettuce, a double stack of meatloaf and top with bacon........at this point I realized I didnt have any tomatoes! Oh well...I had to do without this time..

Topped off and cut in half

Cant beat a good meatloaf sandwich! Just wish I would have had some tomatoes!

Truth is I honestly just make them for the sandwiches the next day.
