Thanks to meateaters post of those yummy looking lime wings I had to try it!

I soaked some wings in the same juice as he used but vacume sealed them a bag and let them soak for a day!

I smoked them in my UDS for 3 hours with apple smoke....MMMMMMM

    Here s the pics!

Trying a deflector plate in the drum...hmmmmm...we'll see!

A close up of the limey wings!

    3 Hours later and OMG!

    The Close up again!

These were really tasty! Little Miss SOB said "These are really Good my dearest daddy!" [IMG]

    I think she wanted seconds!

Nice, that looks like an absolutely great idea for all the forthcoming gatherings we can expect this summer.  Since I suffer from STML (aka old age sneaking up), remind me again what lime juice that was.  I vaguely remember it was something you add adult beverages to.

I found the Key West Lime Juice reference.  A question if I may:  Since the item is a concentrate, I want to dilute it, right?   We're reaching into new areas with this lime stuff.

Those wings look great, you old SOB !!!

That Meateater is a handy guy to have around!

    Nice close-ups too!!!

  17. Those wings have fantastic color. Bet they were great. One question. Does the lime juice acidity start to cook the chicken at all after soaking for a day?

Or does it make them mushy?
