I smoked a couple of the USDA prime Chuck short ribs I got at Costco. I simply used bovine bold rub the night before, and smoke them at 225F to an internal temp of 204F. I did not spritz them with anything, and didn't really miss it. doing the ribs individually, which is how they come at Costco, only took about two and a half hours from refrigerator temperature.

Wow, I learned something new today. I would not have guessed the IT to be so high with beef ribs. I admit, I have not cooked beef ribs in years. I took a shining to the pork ribs but looks like I'll be trying some of these soon. I like the handle on em, looks great.

for me, it's perfect! I keep it on a plastic folding table with a few layers of heavy-duty foil under it. I've measured the tabletop temperature and it stays no higher than 90 degrees Fahrenheit, even if the Davy Crockett is at 450. it holds plenty for me; no problem with a 9 pound pork butt, although I have not tried a brisket. it holds its temperature very well, and the Wi-Fi app is great! the app allows the unit to either turn off or go to another temperature, such as 150 degrees for keeping warm, once the internal temperature of what I'm cooking gets to a certain point. Makes it really easy to "set and forget". I find that spraying the drip tray with cooking oil spray before use makes it really easy to clean, and the drip tray's small enough to fit in my dishwasher. I couldn't be happier.

also, as many of you know, the meat contracts on the rib bone when it cooks, leaving the exposed rib as a handle. takes no effort or trimming on my part - the meat's on the full length of the bone before cooking and the meat contracting.

Huh, I've never seen beef ribs with extra bone like that in my Costco. Lamb, sure, but not beef. They look fantastic, great job!

Huh, I've never seen beef ribs with extra bone like that in my Costco. Lamb, sure, but not beef. They look fantastic, great job!

when i bought 'em, the meat was on the full length of the rib. cooking causes the meat to contract, giving us that great "meat lollipop" effect! i'm glad i have more in the freezer . . . and just one's enough for a meal (maybe 6 - 8 oz. of meat).
