Several of my markets carry Prairie Fresh brand pork, and here is another example of what a good meat cutter can turn out when starting with a good product. Full cut pork steaks from the horn muscles (adjacent to the blade bone) all the way up to the money muscle (under the price tag). This had to have come from a 9#+ pork butt. And yes, the $4.41 is the correct price ✔️.

Agree . That's a good pork brand . Looks like he trimmed the " bacon " out of the fat cap .
Great price considering you're getting the knife work .

Man I need to track down godd pork steaks again. We started seeing them around 2010 loved making them. But then again beef was so much cheaper too and when I caught ripeness on sale I bought a bunch and vac sealed them.

Next time you get a good price on pork butt , grab one and cut as many as you can before the bone . I usually get 2 or 3 nice ones .

I suffered through the bone on a couple with a hand saw . Got some nice steaks , but won't be doing that again .

That's what I do also. Rest is used for sausage.

Prairie Fresh brand pork is very good pork! That is my next fav next to Salmon Creek Farms pork! Love to soy based marinade those pork steaks and, on the grill, got and fast! Tasty!

Aldi here has , I believe Prairie Fresh brand now, full spares at $2.09.

Sometimes local grocery Schnucks will have great deals (1.50/lb, few weeks ago 1.40) on their full boneless loins and 99c-$2/lb butts. I am not sure if they would do it for the vacuum sealed butts, but when it's a "store brand" sale on pork steaks or butts, calling ahead mine will slice them as thick as I want.

I've seen another chain, Dierbergs, keep 2-3" "half butt" slabs in the meat case, too. Don't know when they started doing that but is always nice to have them ready to go, albeit significantly pricier.
