Several of my markets carry Prairie Fresh brand pork, and here is another example of what a good meat cutter can turn out when starting with a good product. Full cut pork steaks from the horn muscles (adjacent to the blade bone) all the way up to the money muscle (under the price tag). This had to have come from a 9#+ pork butt. And yes, the $4.14 is the correct price .

Agree . That's a good pork brand . Looks like he trimmed the " bacon " out of the fat cap .

Man I need to track down godd pork steaks again. We started seeing them around 2010 loved making them. But then again beef was so much cheaper too and when I caught ripeness on sale I bought a bunch and vac sealed them.
