Masterbuilt 30 a creosote machine

I can't seem to use the masterbuilt in without generating thick acrid smoke.  I did not use water this last time and went light on chips.  They always seem to generate thick white smoke.  Anyone have the secret to using this thing?

I have not seen a lot of posters here that use the chips with the MES 30. The most traffic I see on this board are MES owners who use the AMNPS pellet tray and burn food grade wood pellets instead of chips. I am pretty new to the MES and smoking and have never used the chips. I've only used the AMNPS and have not had any of the acrid smoke. Some of the more experienced smokers should be along to help. When I used to use the Chip burner in my MES, I would put 3 or 4 small chips in at a time in order to keep the smoke light enough to avoid creosote.

Then the AMNS was invented & I got one.

Then the AMNPS was invented & I got one. That was 6 years ago, and I haven't wasted my time or meat since.

I fill my AMNPS, light one end, and sit back & relax for up to 11 hours without touching it. Perfect Smoke!!

I found the MES 30 had an air flow problem....  I drilled out the holes in the chip dump chute to something bigger...   Then I started to pull the chip chute out a bit so more air could get in and fully burn the chips....  finally I got white ash in the chip pan....  Then Todd was building and selling the AMNS....    Then Pops installed a mailbox on the side of his smoker.... Then folks started using dryer aluminum vent to hook up the MES and the Mailbox....    The rest is history......  It's a perfect combination providing great smoke and great food....
