Making Pastrami

She kept me out almost all day....whew

I did put the brisket back in the fridge before i left.
Now after being run ragged, lemme see if i can get this cured......zzzzzzz zzzzzzz zzzzz
 
Sounds like a plan, Rick. We'll be awaiting report to see how it goes.
 
Got the brisket patted dry and rubbed down. 4.5 oz sugar cure.

4 days in zip/fridge turning over daily.

Today will be day 2 of the cure. Instructions say 2 days only, rinse (dont soak) then appl the rub. Bag, flip no longer than 7 days.

Guess we will see.

All rinsed off and patted dry.

Apply the mix with a pat on no rubbing. Both sides and all the ends.

Are they the ones from Missouri? Didn't they close? Think I heard he is retiring and business is for sale.

Yes it is. No they are not for sale, their web page is being overhauled.
 
They are happy that they found out. Looks to have been a scam i guess.
