Maiden voyage - St. Louis ribs

    Seasoned the new smoker yesterday, rubbed up a rack of ribs today and tossed them in at 12:15.

    It took exactly six hours at 225 to get the ribs just where I wanted them. This is one of the best racks I’ve ever smoked. I followed the recommendations on the amount of wood and I will increase the amount of wood next time around for a bit more smoke flavor. Tomorrow is a batch of snack sticks.

    Great looking ribs!! But your smoker is way too clean! Bet it won't stay that way long. Congrats on your new SI.
