Well, I saw a few threads discussing Bacon Jam. I had never heard of the stuff until I saw it on SMF. Looked interesting so I thought I would give it a try. I went exactly by SteveH recipe without the cayenne pepper. When cooled, I filled a couple of high end jars and vac packed the rest in pint portions. Let it sit in the refrigerator overnight in those high end jars. I had biscuits with bacon jam this morning. It was tasty. I liked it. The only thing I will try next time is add a little more brown sugar and a little more syrup. Other than those two minor adjustments it's all good. Thanks for posting your recipe SteveH.
