hey folks.

I’m a newbie Canadian at this delicious art of Smoking. I tried doing fish the other day and it called for 120* to start off. My chips just wouldn’t burn at that temperature, I’m assuming because it was pretty chilly out. Is there any tricks a guy can use to combat this and keep a good flow of smoke going at low temps?

Yah, I use the Amazen for any smoke I plan to do overnight. I don't mind putting chips in, but I sure ain't staying up 24+ hours straight to do it lol
