Cured longer than necessary, going to follow taste of artisan maturation and fermentation steps for the first week then drying… I sprayed mold 600 a day after initial hanging because I forgot but we’ll see what happens… got
To try my homemade stainless netting applicator which worked awesome lol finally also found a good use for my hog ring machine for the netting Caz it’s doesn’t work good on college casings and that what I primarily use

It all looks great . I'm interested in the netting tube . Damn things are expensive . Been thinking about making one myself . Is it hinged / cut along the length ?

No you don’t need to do any of that …. Piece of pipe is all I did …. 4” and 6” …. I tapered them by cutting and welding but it was a complete waste of time, and regular piece of 3,4,5,6” pipe will work for various nettings….
Those things online are ridiculous
 
So I’ve had these equalizing in the vac seal in fridge for at least three months so I will
Slice them today and get a ton of picture and test taste

Looks like those are wrapped in collagen sheets? What’s the wrapper?

Not usually a problem with natural casings, but may be an issue with the collagen casing. Mold 600 does not usually get 100% coverage on collagen casing anyhow. I would recommend a spray with distilled water on the casing for first 2-3 days to keep it moist and allow the mold to get established....

WOW….. is all I can say this was definitely worth the wait… started in February vac sealed in June… the taste is out of this world !!!!!
