Hola, my fellow smokers!! My name is David, and I reside in the great barbecuing state of Texas. I started smoking meats about ten years ago. Initially, I was horrible at it due to that I had a hard time regulating temperatures on my Weber. A few years later I bought a dedicated smoker, Char-Griller Pro. It was a whole lot better than smoking on the Weber, and made some decent briskets, pork butts, and ribs. Now, I have a Outdoor Gourmet Triton Vertical Smoker, and I’ve done a couple of tasty cooks on it, pork butt & some St. Louis style spare ribs. I really enjoy smoking meats, find it therapeutic, and love the science involved in it. I hope to hear from y’all, and find some delicious recipes.
 
Welcome. There is no shortage of great advice and terrific recipes. You will find this forum terrific. Just as important, don't forget to impart your knowledge and provide the pics!

Welcome to the group Dave. I started off a lot like yourself. I too have been tinkering for years, and find the process of it very therapeutic indeed. This is a great place for ideas, reviews, and motivation. I have a list of "cooks" I want to try before the weather here turns too white.

One nice thing about Houston is that it rarely snows here, and when it does it only lasts for a day or two. Therefore, we have a year round barbecuing season.
