Long time no chili... until now

Its been a long time since I've made chili, and now that it's finally cold out and I have a day off, I decided to make some.  I didn't have a  recipe to use so I just winged it. 

Here's what I used:

2lb pork roast

1 1/2 lb beef chuck

1 lb ground beef

1 can beef broth

Half bottle Southern Tier Choklat Imperial Stout

1 orange bell pepper

1 large sweet onion

6 Jalapenos

2 Chipotles in adobo with sauce

1 can 15oz tomato sauce

1 can diced tomatos

6 cloves garlic

2 TBLS Chili powder

1/2 TBLS Cumin

And to drink while cooking, I was switching it up between Southern Tier Old Man and 2XSMASH






Girlfriend made some rice so I threw some in my bowl with the chili.  Came out great!  Barely enough heat though.  My parents and girlfriend said it had the right amount of heat but I barely enough noticed it.  I usually make it too spicy for them so I was trying not to do that this time.  That Southern Tier Choklat barely tastes like a beer, it was like liquid chocolate!  It was good but too much chocolate taste for me to drink a whole beer.
 
Looks good,never had rice in chili but it may of sucked up some of the heat as well.
 
Looks like a great recipe. The bowl looks delicious, but I'm not a fan of rice in my chili. That's just me. Maybe some saltines.

Elbow macaroni is also good in chili, growing up our mom would make some to add in to make the chili go a little farther.
 
Next time I'm not even going to waste using a beer in it, better off drinking it.  Didn't seem to change the flavor.  Next time I'll try either chocolate or coffee in it. 
 
Looks good, a nice recipe and I too frequently serve over rice. Good Cincinnati Style, over Spaghetti as well. I use 6T Chili Powder but most often toast and grind my own. 4 Ancho or Mulato Chiles, 2-3 Guajillo Chiles and 2-3 Pasilla or Chile California. I've gotten great product from Spices Inc..The flavor is much fresher and mixing them adds a depth of Chile flavor to the pot, rather than one note. Using Dry Chiles, you have to add some Mex Oregano, 1tsp would be good, because Chili Powder already has it blended in...JJ
 
Tasty looking chili, but (wait for it) where's the beans???? Oh forgive me I'm from the PNW and chili comes with beans or tofu, pick your choice, lol!

 I hate beans.  I personally don't think it belongs in chili, I like the more traditional chili with alot of meat.
