Looking for a DRY BRINE FOR A 2 1/2 LB RUMP ( BOTTOM ROUND ) ROAST.
DO NOT WANT MUCH SALT!
Thinking of using coarse sea salt very lightly along with pepper and spices?
Can I spice it up to brine, not rinsing it ?
I did a Turkey breast and rinsed it before spicing it ? it was good, slightly salty.
Not sure about the Beef Roast?
Roasting it @ 225 with liquid pan.
