An acquaintance of mine smokes his brisket for up to 20 hours, and gets an extremely good end product. Does anyone else go for these, what seems to me, extreme long times??

Absolutely...I smoke Brisket at 200*F and plan on 2 hours per pound. There are others that go hot and fast, half the time...JJ
