Long Smoke Sticks

I put this batch of sticks in this morning around 7:00am. Just pulled from smoker at 9:30 pm Did 2 runs of smoke for 2 hours, Once at 8:30 am and around 7:20 pm. IT was 151.4 so going to bloom for a couple hours.

Had to cut one open.   This is the first smaller batch. The larger will fridge rest for a day or 2.

thoses are some fine looking sticks you did there Rick. Now Craig with collagen casing I also have to tie the ends so to close them when stuffing.

I tied these like that cuz they are going to my grand daughter in PA, she likes em like that.
