I don't usually sauce but I am starting too.




Took to IT 150.





Super tender and juicy.

These are loin csr's, if you look at the first picture you can see the rib bones.  You want to cook them like a loin.

If you have shoulder csr's they have a odd shaped bone in them.  Cook them to probe tender.
