Spent some years growing up north of Charlotte, NC and loved the bbq. Didn’t know until recently that it was a regional style. Decided to give it a try, did some reading on the interweb for some rubs, mop sauces and bbq sauces. I’m not from the area so all advice is welcome. It was really good and everyone enjoyed it!
Rub
4 tsp sweet paprika
1 Tb brown sugar
1 Tb salt
1 tsp black pepper
1 tsp white pepper
1 tsp ground mustard
1 tsp garlic powder
1 tsp cayenne
Mop Sauce
1 cup ACV
1 cup beer
1 Tb Worcestershire
1 tsp crushed red pepper
Lexington Dip
1 cup vinegar
1/4 cup ketchup
1/4 cup apple juice
1 tsp hot sauce
3 Tb brown sugar
1/2 tsp salt
1 tsp red pepper
1 tsp black pepper
Western Carolina Sauce
2 cups ACV
11/2 cups water
1/2 cup ketchup
1/4 cup brown sugar
2 Tb salt
1 Tb black pepper
1 Tb red pepper
*bring to a boil, then simmer for 20min
Eastern Carolina Sauce
1 cup ACV
1 Tb sugar
1 Tb red pepper
1Tb Tabasco sauce
I was concerned that the red pepper flakes and vinegar would over power everything but it all tasted great.
