I'm planning to try hanging spare ribs tomorrow in my UDS. I'm doing 10 racks and I will be going 'no wrap'.

First time trying this hanging method and would love to hear any tips from those that have done it before.

Thanks!

I hang them in my pit boss junior. I will flip them top to bottom about halfway through the cook. I also start out with the thickest part closest to the fire. I pull them off when they pass the bend test . then into foil with some sauce for good rest.

One of the first things I built for my drum smoker was a rack for hanging sausage, pork loins, and ribs. It's a straight forward cook. I was worried about the rib cooking too tender and falling so I double hooked, but now I only double hook on full slabs of spares. I generally put the hook between the 2nd and 3rd rib. About the only other tip is to have a spray bottle with a long stream.

My drum is about 6" taller than standard drums, so I really don't have any issues with the ribs being too close to the charcoal basket.

Thanks. The double hook looks like a good idea.
